Babyeggs Café is the coming together of Deniz Memed from the Atlantic Group and burger franchise Royal Stacks and Jared Jones, former Head Chef of Cote Terra.

It’s a breath of fresh air in the industrial sector of Moorabbin with a venue as visually appealing as the modern brunch menu.

Interior design and architecture from boutique design studio, Urban Workroom, spearheaded by Tim Watts, whose 16 years’ experience is evident from the entrance alone. Honeycomb tiles, curved booths and neon signs work seamlessly together, guiding customers through the café to the floor-to-ceiling Star Wars mural at the rear.

A three-day project for Melbourne graffiti muralist, Andre from Set It Off, the mural features an otherworldly landscape with spaceships, planets, a space-station and rocky terrain. In the foreground, where customers can take an interactive photo with, is Baby Yoda (a.k.a Grogu) himself!

The menu hits a little closer to home, with re-imaged Melbourne brunch favourites. The Hotcake is topped with an eccentric cardamom, pumpkin & white chocolate ganache. Vegetarians will delight in Dahl with coconut sambal and crispy eggs, while the Smashed Avo is served on thick-cut “Life Loaf.”

Jones’ experience with hatted and well-renowned chefs (Eric Robinson of The Other Chef Fine Foods, Lou Perry of The Stunned Mullet, Scott Picket of The Point and Paul Davies of Merchant’s Guild) and his consulting work with cafes across Melbourne has led to the development of a menu that’s exciting yet familiar and innovative to brunch-goers.

After a career working alongside leaders like Donovan Cooke, Joe Antonio, and Christian Price at the Atlantic Group, Babyeggs is Memed’s first solo venture, named in honour of his 14-month old daughter, Yara.

Q Are your pastries baked in-house?

Absolutely! The neon ‘Now Baking’ sign will be lit every morning, with the kitchen fully equipped with a prover to bake all the bread and pastries in-house. Bayside residents can forget commuting to the likes of Toorak,Brighton or the CBD for artisan bakery goods.
